Pasta with bell peppers and chicken

Here’s a flavorful recipe for pasta with bell peppers and chicken:

Ingredients:

  • 300g (10 oz) pasta (penne, fusilli, or any type you prefer)
  • 2 chicken breasts (sliced into thin strips)
  • 2 bell peppers (use a mix of colors, thinly sliced)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (400g/14 oz) diced tomatoes (or 2 fresh tomatoes, chopped)
  • 1/2 cup heavy cream (optional, for a creamy version)
  • 1/2 cup grated Parmesan cheese (optional)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil (or 1 tbsp fresh basil, chopped)
  • Salt and pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. Cook the Chicken:

    • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken strips, season with salt and pepper, and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté the Vegetables:

    • In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until softened, about 3 minutes.
    • Add the garlic and cook for another minute until fragrant.
    • Add the sliced bell peppers and cook until they are tender, about 5-7 minutes.
  4. Combine with Sauce:

    • Stir in the diced tomatoes (with their juice), dried oregano, and dried basil. If you prefer a creamy sauce, add the heavy cream at this stage.
    • Let the mixture simmer for 5-10 minutes until the sauce thickens slightly.
    • Add the cooked chicken back into the skillet, and toss everything together until the chicken is well coated with the sauce.
  5. Combine with Pasta:

    • Add the drained pasta to the skillet and toss everything together, ensuring the pasta is well coated with the sauce. If using Parmesan cheese, stir it in at this stage.
  6. Serve:

    • Garnish with freshly chopped parsley or basil, and serve hot. You can also sprinkle extra Parmesan cheese on top if desired.

Tips:

  • Add Spice: For a spicier version, add a pinch of red pepper flakes or a chopped chili when sautéing the garlic.
  • Vegetarian Option: Skip the chicken and add more vegetables like zucchini, mushrooms, or eggplant.
